Lucas liked the character, so he wrote her into Episode II.

Most of her scenes were cut in Episode II, but you can see her in the final battle.

She will be in Episode III, and according to her she doesn't die. Although who knows at this point. If she doesn't die, she may be offered a role in the TV series.
