Which one is better ... or easier to use for a person who has no idea what he's doing?

any program is good for modelling mostly, its just what you feel more comfortable with. lightray is needed to export into AA and its expansions where as milkshape is needed for PA

Id start wiht Milk first that was pretty easy to use... but my models still look like crap

well, you make the model, then create a uv map. then export the uv map and open it with photoshop and skin it, then save and apply the new skin to it. thats how you get a skin on it

Ok ... once you make the model, do you have to use another program to make a uv map? If so how?

no, most programs will allow you to make a uv map right inside the program, then you use adobe photoshop or jasc paint shop pro(those are the best) top opoen it and edit it, then you import the uv map into the program and apply it to the model.
