i just ordered a new computer and it comes with
"1Gb Dual Channel DDr2 Sdram at 533Mhz-2Dimms"

i have no clue what this does, can anyone explain?

It's just DDR2 ram. Ram is basically the memory used by your system to store data while it's required: for example, Battlefield 2 will load all map, music and sound data in your ram for quick access when necessary.
