Let me give you a correct answer.

Some questions first though. With the second demo, do you get this "3 sec shutter" if you host a lan game? This could be confused as internet/server communication and not game "lag".

There is not a "massive" difference between the retail game and demos but yes the demos are not as polished as the retail game( Huge difference from the SP demo). I have the retail game and have about half the specs you have (except for ram). I dont experience this "shutter" you mention.

Dont forget to update drivers for your video and sound whenever having performance issues with a game, especially when your systems specs meet the recommended not the minimum.
