The best "freeware" program out there is one called Camtasia, made by the same people who produced SnagIt a while ago. You can DL it free and have a 30 day free trial period.

Be warned though, I have a top of the line Dell Dimension 8200 and the best framerate I could manage to get was still under 10fps (full screen mode). The best reults I got was blocking out roughly a 240x360 area around my crosshairs and having the program capture only that.

The suggestion to use a VCR hooked up to your s-video out is your best option if you're looking for high detail and framerate.
