Greivous wasn't very healthy, he had his chest crushed by Mace Windu before leaving Coruscant. Hence him being hunched over and coughing.
He wasn't a Sith lord, he was just an Alien that was setup by Sidious and Dooku to lead the droid armies. Dooku planted a bomb in his ship, severly injuring Grievous. They rebuilt him with droid parts and lied to him, saying Mace Windu betrayed his race or something.
I loved the beginning space battle, the way Obi Wan was all "oh this will be easy". Ewan really pulled the role off in the prequels, he is by far the shining light.
Hayden was much better in this film, he played the dark Anakin very well. Rumor is Hayden wanted to play Anakin this way in Episode II, but Lucas didn't want to hear it. George wanted the whiney angsty teenager version.
The difference between this film and the other two prequels, I actually cared what happened to the characters. I felt bad when Anakin was sent to kill the separatists leaders. All they wanted was an end to the war, a war which they didn't want in the first place. They were lied to by the sith, manipulated and sacrficed for their selfous ways. I couldn't have cared less about Nute Gunray in the prequels, but in this movie you really feel for him and the rest of the separatist leaders. Vader just slaughters them.
Overall a very good movie, can't rate in on par with the originals, but there is no comparison. Different time, different age, different view of the world. It's unfair to compair them, just view them as a different set of films.
