When you are going to cook some chicken marinade it in Italian Salad dressing for a couple of hours first.
Cajun 15 bean soup
1 1lb4oz bag of 15 bean soup
1 to 2 lb Italian sausage
1 large onion, chopped
1 15oz can tomatos diced
1 lemon or 2 limes
1 to 2 cloves garlic
Place the beans in a large pot and cover with water and vinager (50/50) and soak overnight. (At least 8 hours) After soaking drain and recover with 2 qt water. Look through the beans and discard the screwed up ones. Bring the beans up to a rolling boil, reduce the heat and simmer uncovered for 2.5 hrs. In a skillet sauté the onion, garlic, and sausage (extra virgin olive oil) untill sausage is browned. Drain excess grease and add to the beans along with the tomatoes,lemon or lime juice, and the flavor pack that came with the beans. Simmer for another 30 min to an hour.
Put the soup into sealable containers and freeze. To eat place container in microwave and nuke on high for 3 min. Makes 5 10 8 servings.
