it dates back to slavery where chicken was one of the only meats they were given. then, afterwards, it was one of the only animals cheap enough for freed slaves to raise. then it just kind of became a traditiong that transcended through generations.

Accurate. When any populace has access to a small variety of food, they tend to find new and innovative ways to prepare it and make it different each time.
