 I said it in Buck's first video thread: CoD has the recorddemo console command feature, much like Quake 3 and Jedi Knight II. You record a demo in the game, then play it back with a command again.
You then use a program like FRAPS to record bits of the movie from the demo, then use a program like Windows Movie Maker or Adobe Primere to patch the movies into one single film, with titles, music, or whatever else.
