Both are valied statements, although the former is a bit of a syntax tongue-twisted, they are still grammatically correct. If you can't care any less that means you're at the lowest point of caring.

So why would you try to say that it is a bottomless feeling of non-caring? Besides, "I could care less" suggest more that you have a higher level of caring which has the opportunity to be dropped to nothing.
