GI Jerk DID have a guide at http://www.mohadmin.com, but unfortuneatly, its been down for quite awhile.

Basically, like Zoner said, pickup a Video Capture card for your PC, and export the data to your VCR or another PC, then dump it back, edit it, and you got a movie. . .
