I am in the process of getting a server for my clan, the problem is I have no idea about ANTI-Cheat Plugins, Server Mods or how to select initial Map? If there is anyone who knows how to setup a server and can give me the best possible advice and mods, I would really appreciate it.........Thanks

As long as your server uses V1.11, then you are safe from cheats.

Just search through the site for mods for your server, and read their readme files on how to get them to work (Crow King's Auto-Kick, DogMeat's Map Fixes, Soccerdevil & Bazooka Joe's Chat Filter, etc)
